Baked Salmon with Roasted Vegetables

Ingredients
- 2 salmon fillets
- A few big handfuls of vegetables — asparagus, broccolini, zucchini, cherry tomatoes, or whatever’s around
- Olive oil, salt, pepper
- 1 lemon
- 2 cloves garlic, minced or thinly sliced (optional)
- Fresh or dried herbs — thyme, rosemary, dill — whatever fits (optional)
Method
- Heat oven to 425°F. Toss vegetables on a sheet pan with olive oil, salt, and pepper. Spread in a single layer and roast 10 minutes.
- Push vegetables to the sides. Lay salmon on the pan, skin-side down. Drizzle with olive oil, season with salt and pepper, scatter garlic and herbs over the top if using.
- Roast until salmon is just cooked through and flakes easily, ~12–15 minutes depending on thickness.
- Squeeze lemon over everything and serve straight from the pan.
