Baked Salmon with Roasted Vegetables

Ingredients

  • 2 salmon fillets
  • A few big handfuls of vegetables — asparagus, broccolini, zucchini, cherry tomatoes, or whatever’s around
  • Olive oil, salt, pepper
  • 1 lemon
  • 2 cloves garlic, minced or thinly sliced (optional)
  • Fresh or dried herbs — thyme, rosemary, dill — whatever fits (optional)

Method

  1. Heat oven to 425°F. Toss vegetables on a sheet pan with olive oil, salt, and pepper. Spread in a single layer and roast 10 minutes.
  2. Push vegetables to the sides. Lay salmon on the pan, skin-side down. Drizzle with olive oil, season with salt and pepper, scatter garlic and herbs over the top if using.
  3. Roast until salmon is just cooked through and flakes easily, ~12–15 minutes depending on thickness.
  4. Squeeze lemon over everything and serve straight from the pan.
