Gyudon (Japanese Beef Rice Bowl)

Ingredients

  • ½ lb thinly sliced beef (ribeye or chuck) — H Mart hotpot slices ideal
  • ½ yellow onion, thinly sliced
  • ½ cup dashi
  • 3 Tbsp soy sauce
  • 2 Tbsp sake
  • 2 Tbsp mirin
  • 1 Tbsp sugar
  • Cooked short-grain rice, to serve
  • 1 scallion, thinly sliced
  • Pickled red ginger (beni shoga), optional

Method

  1. Combine dashi, soy sauce, sake, mirin, and sugar in a wide pan over medium heat. Bring to a simmer.
  2. Add onion and cook until softened and translucent, ~5 minutes.
  3. Add beef in a single layer (work in batches if needed). Cook, breaking up any clumps, until just cooked through, 2–3 minutes.
  4. Spoon beef and broth over bowls of warm rice. Top with scallion and pickled ginger if using.
