Gyudon (Japanese Beef Rice Bowl)

Ingredients
- ½ lb thinly sliced beef (ribeye or chuck) — H Mart hotpot slices ideal
- ½ yellow onion, thinly sliced
- ½ cup dashi
- 3 Tbsp soy sauce
- 2 Tbsp sake
- 2 Tbsp mirin
- 1 Tbsp sugar
- Cooked short-grain rice, to serve
- 1 scallion, thinly sliced
- Pickled red ginger (beni shoga), optional
Method
- Combine dashi, soy sauce, sake, mirin, and sugar in a wide pan over medium heat. Bring to a simmer.
- Add onion and cook until softened and translucent, ~5 minutes.
- Add beef in a single layer (work in batches if needed). Cook, breaking up any clumps, until just cooked through, 2–3 minutes.
- Spoon beef and broth over bowls of warm rice. Top with scallion and pickled ginger if using.
